When using dried mushrOOms Soak them covered in warm water for 30 minutes first.
The 1 tsp of filling doesn’t lOok like much but trust me it is the right amount.

if they seem sloppy or don’t firm up add more cornstarch - No more than a tablespoOn
If they don’t seem to have enough veggie crunch you can add finely chopped water chestnuts, more green onion more finely shredded napa cabbage
DO not use regular cabbage. bok CHoy can be an option as long as it’s baby bok choy
When ready to serve a lot of potstickers, serve on a bed of finely shredded lettuce or Napa Cabbage. Arrange potstickers and pour sauce over the whole platter.
